Grilled Turkey Salad with Peanut Dressing

Turkey
1/2 Cup honey
1/2 Cup reduced-sodium soy sauce
5 Cloves garlic, minced
1-1/2 Tablespoons fresh ginger root, minced
1/2 Teaspoon sesame oil
4 Pounds TURKEY BREAST or TENDERLOINS
 
  1. In large plastic bag, combine honey, soy sauce, garlic, ginger and sesame oil. Pierce turkey with fork and place in bag.
  2. Refrigerate 1 hour, turning turkey every 15 minutes.
  3. Preheat charcoal grill. Drain turkey and discard marinade.
  4. Over direct heat, grill turkey 8 to 10 minutes per side or until 170 degrees F internal temperature is reached.
  5. Let stand 10 minutes. Slice into 1/4-inch medallions.
  6. Cover and hold for service in refrigerator.
 
Peanut Dressing
5 Cloves garlic, minced
1/4 Cup fresh ginger root, minced
1/4 Cup cilantro leaves, finely chopped
1-1/8 Cups rice vinegar or white vinegar
1-1/3 Cups mandarin orange juice
1/2 Cup smooth peanut butter
1/3 Cup reduced-sodium soy sauce
1/3 Cup sesame oil
1/3 Cup hoisin sauce
 
  1. In food processor, combine garlic, ginger and cilantro.
  2. Add vinegar, orange juice, peanut butter, soy sauce, sesame oil and hoisin sauce. Process until smooth.
  3. Hold for service in the refrigerator until ready to serve.
 
Salad Assembly
8 Heads leaf lettuce, torn into bite-size pieces
25 Each green onions, sliced
4 Each medium red onion, sliced into 1/4-inch rings
4 Each red bell pepper, sliced into 1/4-inch rings
1-1/2 Pounds fresh pea pods
32 Ounces mandarin orange slices, drained, reserve juice
1-1/8 Cups unsalted peanuts
3/4 Pound chow mein noodles
 
  1. In large bowl, combine lettuce, green onions, red onion, bell pepper, pea pods and oranges.
  2. Arrange salad mixture on plates. Top with turkey medallions.
  3. Garnish with peanuts, chow mein noodles and Peanut Dressing.
