Turkey Chops with Cucumber and Tomato Salsa
| Preparation |
| 3 Pounds plain yogurt |
| 1-1/2 Cups vegetable oil |
| 2 Tablespoons chili powder |
| 2 Tablespoons cumin powder |
| 1-1/2 Tablespoons ginger paste |
| 1-1/2 Tablespoons garlic paste |
| To Taste salt and white pepper |
| 25 8 Ounces each TURKEY BONE-IN CHOP |
| |
- In a mixing bowl, combine the following marinade ingredients: yogurt, vegetable oil, chili powder, cumin, ginger and garlic pastes, salt and pepper.
- Place turkey chops in a large pan, pour marinade over turkey, making sure marinade is applied on both sides. Cover and marinate at least 3 hours in cooler.

| Salsa |
| 1/4 Cup fresh cilantro, chopped |
| 7 cucumbers, medium, peeled, seeded, and chopped |
| 7 tomatoes, medium, seeded and chopped |
| 7 jalapenos, seeded and minced |
| 1/4 Cup olive oil |
| 1/4 Cup fresh lemon juice |
| To Taste salt |
| |
- Mix cilantro, cucumbers, tomatoes and jalapenos with olive oil and lemon juice. Season to taste with salt.

| Per Order |
- Grill or broil turkey bone-in chop for 7 minutes per side or until chops reach an internal temperature of 170 degrees F.
- Plate turkey and garnish as needed. Serve 2 ounces of salsa on side or in ramekin.
