Turkey Chops with Cucumber and Tomato Salsa

Preparation
3 Pounds plain yogurt
1-1/2 Cups vegetable oil
2 Tablespoons chili powder
2 Tablespoons cumin powder
1-1/2 Tablespoons ginger paste
1-1/2 Tablespoons garlic paste
To Taste salt and white pepper
25 8 Ounces each TURKEY BONE-IN CHOP
 
  1. In a mixing bowl, combine the following marinade ingredients: yogurt, vegetable oil, chili powder, cumin, ginger and garlic pastes, salt and pepper.
  2. Place turkey chops in a large pan, pour marinade over turkey, making sure marinade is applied on both sides. Cover and marinate at least 3 hours in cooler.
 
Salsa
1/4 Cup fresh cilantro, chopped
7 cucumbers, medium, peeled, seeded, and chopped
7 tomatoes, medium, seeded and chopped
7 jalapenos, seeded and minced
1/4 Cup olive oil
1/4 Cup fresh lemon juice
To Taste salt
 
  1. Mix cilantro, cucumbers, tomatoes and jalapenos with olive oil and lemon juice. Season to taste with salt.
 
Per Order
  1. Grill or broil turkey bone-in chop for 7 minutes per side or until chops reach an internal temperature of 170 degrees F.
  2. Plate turkey and garnish as needed. Serve 2 ounces of salsa on side or in ramekin.
