Turkey Steaks Siciliano
| Siciliano Sauce |
| 2 Pounds tomatoes, peeled, seeded, and chopped |
| 6 Ounces sweet onions, chopped |
| 5 Large garlic cloves, minced |
| 1/4 Cup olive oil |
| 1/4 Cup red wine vinegar |
| 1-1/2 Teaspoons dried basil leaves |
| 1-1/2 Teaspoon dried oregano leaves |
| To Taste salt and black pepper |

- Chop tomatoes, onion, and garlic together in a food processor to a chunky consistency. Combine with remaining sauce ingredients and refrigerate for at least 1 hour to allow flavors to blend.

| 12 eggs |
| 1-1/2 Cups milk |
| 40 Steaks (6-1/4 Pounds) TURKEY STEAKS, thawed |
| 1 Pound Italian bread crumbs |
| As Needed vegetable oil |
| |
- Blend eggs and milk thoroughly. Dip thawed turkey steaks in egg mixture, then into bread crumbs, pressing to help crumbs adhere.
- Heat about 1/8 inch of vegetable oil in a large skillet and saute breaded turkey steaks about 2 minutes per side, to an internal temperature of 165 degrees F. Cook in batches, if necessary, changing oil if necessary.
- For each portion, serve 5 ounces turkey steak with 2 ounces of Siciliano sauce.
