Pavo Borracho (Drunk Turkey)
| Ingredients |
| 1 Cup oil |
| 4 Ounces butter |
| 8 Pounds TURKEY TENDERLOINS, cut in 2-inch medallions |
| 2 Pounds seedless raisins |
| 3/4 Teaspoon cinnamon |
| 3/4 Teaspoon ground coriander |
| 3/4 Teaspoon ground cloves |
| 3/4 Teaspoon ground cumin |
| 12 Cloves garlic, minced |
| 2 Cups dry white wine |
| 3/4 Teaspoon salt |
| 1-1/2 Teaspoon pepper |
| 3 Cups slivered almonds, toasted |
| 4 Cups pimento stuffed olives, drained, sliced in two |
| 1/2 Cup capers, drained |
| |
- In a skillet, heat oil and butter. Saute turkey tenderloin medallions until golden.
- Add raisins, all spices, garlic, white wine, salt and pepper. Cover and simmer over low heat until turkey is tender when pierced with a fork and all flavors have blended (approximately 1 hour).
- Add almonds, olives and capers. Heat uncovered for 5 minutes.
