Ingredients
1 Cup oil
4 Ounces butter
8 Pounds TURKEY TENDERLOINS, cut in 2-inch medallions
2 Pounds seedless raisins
3/4 Teaspoon cinnamon
3/4 Teaspoon ground coriander
3/4 Teaspoon ground cloves
3/4 Teaspoon ground cumin
12 Cloves garlic, minced
2 Cups dry white wine
3/4 Teaspoon salt
1-1/2 Teaspoon pepper
3 Cups slivered almonds, toasted
4 Cups pimento stuffed olives, drained, sliced in two
1/2 Cup capers, drained
 
  1. In a skillet, heat oil and butter. Saute turkey tenderloin medallions until golden.
  2. Add raisins, all spices, garlic, white wine, salt and pepper. Cover and simmer over low heat until turkey is tender when pierced with a fork and all flavors have blended (approximately 1 hour).
  3. Add almonds, olives and capers. Heat uncovered for 5 minutes.
