New Fashioned Turkey Loaf
| Ingredients |
| 1 Tablespoon unsalted butter |
| 1/4 Cup shallots, finely chopped |
| 2-1/4 Pounds GROUND TURKEY |
| 1 Teaspoon salt |
| 2 Tablespoons parsley, minced |
| 1/3 Cup fresh bread crumbs |
| 1/4 Cup chili sauce |
| 1/2 Teaspoon soy sauce |
| 1 Large egg, lightly beaten |
| 1/4 Cup milk |
| 4-5 Strips TURKEY BACON |
| As needed wine mushroom sauce |
| As needed garlic mashed potatoes |
| As needed Vegetable combo |

| Preparation |
- Over medium heat, cook shallots in butter until translucent.
- Combine turkey, shallots, salt, parsley, bread crumbs, chili sauce, soy sauce, beaten egg and milk.
- Mix gently until combined.
- Place in an ungreased loaf pan and top with turkey bacon slices.

| Bake |
- Place in a preheated 400 degree F. oven and bake for 20 minutes.
- Reduce heat to 350 degrees F. and continue to bake for an additional 45 minutes or until a meat thermometer, inserted in center, registers 165 degrees F. Remove from oven and allow to rest for 10-15 minutes before slicing.

| For Service |
- Nap dinner plates with wine mushroom sauce and pipe on garlic mashed potatoes.
- Place a combo of vegetables around the diameter of the plates. Shingle 2 slices turkey loaf atop potatoes. Each portion: about 5 ounces.
