Mesa Turkey Sandwich

Mesa Sauce
1 Teaspoon ground cumin
2-1/2 Teaspoons dried oregano
1-1/2 Teaspoons chili powder
1/2 Teaspoon freshly ground black pepper
To Taste salt
10 Ounces mayonnaise
1/2 Cup green onion, sliced thin
 
  1. Blend cumin, oregano, chili powder, black pepper and salt into mayonnaise. Stir in sliced green onions. Cover and refrigerate until ready to use.
 
Assembly
40 Slices sourdough bread
20 Pieces leaf lettuce, washed and dried
40 Slices tomato
5 Pounds SMOKED TURKEY BREAST, sliced thin
5 Each avocado, sliced into 16 wedges each
1-1/4 Pounds Monterey Jack cheese, sliced
 
  1. For each sandwich: Toast 2 slices sourdough bread on grill or under broiler.
  2. Spread each slice of bread with 1/2 tablespoon of Mesa Sauce each, using about 1-1/3 cups of sauce.
  3. On one slice, arrange 1 piece of lettuce, 2 slices of tomato, 4 ounces smoked turkey, 4 wedges of avocado and 1 ounce of cheese. Top with second slice of bread and cut in half diagonally to serve.
