Mesa Turkey Sandwich
| Mesa Sauce |
| 1 Teaspoon ground cumin |
| 2-1/2 Teaspoons dried oregano |
| 1-1/2 Teaspoons chili powder |
| 1/2 Teaspoon freshly ground black pepper |
| To Taste salt |
| 10 Ounces mayonnaise |
| 1/2 Cup green onion, sliced thin |
| |
- Blend cumin, oregano, chili powder, black pepper and salt into mayonnaise. Stir in sliced green onions. Cover and refrigerate until ready to use.

| 40 Slices sourdough bread |
| 20 Pieces leaf lettuce, washed and dried |
| 40 Slices tomato |
| 5 Pounds SMOKED TURKEY BREAST, sliced thin |
| 5 Each avocado, sliced into 16 wedges each |
| 1-1/4 Pounds Monterey Jack cheese, sliced |
| |
- For each sandwich: Toast 2 slices sourdough bread on grill or under broiler.
- Spread each slice of bread with 1/2 tablespoon of Mesa Sauce each, using about 1-1/3 cups of sauce.
- On one slice, arrange 1 piece of lettuce, 2 slices of tomato, 4 ounces smoked turkey, 4 wedges of avocado and 1 ounce of cheese. Top with second slice of bread and cut in half diagonally to serve.
