Mexican Breakfast Rollups

Ingredients
1 Dozen large eggs
1/4 Teaspoon cumin
1/4 Teaspoon chili powder
To Taste salt
To Taste pepper
1 Pound TURKEY SAUSAGE, breakfast bulk
1/2 Cup sweet onion, small dice
1/4 Cup red bell pepper, small dice
1/2 Cup monterey jack cheese, shredded
4 Each 10-inch flour tortillas
1/4 Cup mayonnaise
1/2 Cup black beans, cooked, rinsed, and drained
1/2 Cup guacamole
1/4 Cup salsa, mild
1/2 Cup sour cream
 
  1. Whip eggs. Add cumin, chili powder, salt, and pepper. Set aside.
  2. Crumble turkey sausage into a hot saute pan and cook until brown. Drain if needed and reserve.
  3. In the same pan, saute onion and peppers until soft. Add egg/herb mixture and cook until set. Do not stir.
  4. Top with cheese. Broil until cheese melts. Cool. Turn the omelet onto a sheet of parchment paper. Cut into 2-inch strips.
  5. Spread each tortilla with mayonnaise, cover the surface to the edge of the tortilla.
  6. Lay strips of omelet in the center of the tortilla. Top with turkey sausage and black beans. Wrap tightly. Cut in half, on the diagonal.
  7. Cover half of the plate with a layer of guacamole, the other half with salsa. Swirl with a knife tip. Stand halves on end. Pipe a sour cream rosette on each side of the plate. Note: Also makes a nice brunch entree.
