Holiday Green Bean Casserole

3 Cups TURKEY BROTH
4 Cups cut fresh green beans OR 20 ounces frozen cut green beans
1 Can (10-3/4 ounces) condensed cream of mushroom soup
1/2 Cup milk
1/2 Cup chopped red bell pepper
1/8 Teaspoon freshly ground black pepper
3/4 Cup shredded Cheddar cheese, DIVIDED
1-1/3 Cups fried onion rings, DIVIDED
 
  1. Bring broth to boil in a large saucepan. Add beans and simmer, in covered pan, just until beans are tender, about 5-8 minutes. Drain beans.
  2. Meanwhile mix soup, milk, chopped bell pepper, black pepper, 1/2 cup cheese and 2/3 cup onions in a 1-1/2 quart baking dish. Stir in cooled beans and mix well.
  3. Bake in a preheated 350 degree F oven for 25 minutes or until the mixture bubbles. Sprinkle mixture with remaining 2/3 cup onions and 1/4 cup cheese.
  4. Bake 5 additional minutes or until the cheese melts. Allow to stand for 5 minutes before serving.
