USDA Inspectors On the Job
Federal law requires USDA inspectors be on-site at meat and poultry processing plants. USDA's Food Safety Inspection Service employs 8,000 in-plant and other frontline personnel who protect public health in 6,200 federally inspected slaughter and processing establishments, in laboratories, and in commerce nationwide.
These federal officials stay on the job with day-to-day inspection. They verify that these establishments follow all food safety and humane handling requirements. And their work continues - even if the federal government were to close offices and discontinue routine services.
