National Turkey Federation Unveils Its Top Five List
Most Popular Recipes From Eatturkey.com Announced

Washington, DC (October 2002) - This year's most popular turkey dishes, as selected by visitors to the foodservice recipe database at www.eatturkey.com, cover a broad spectrum of ethnicities, flavors and menu occasions, according to a report recently released by the National Turkey Federation (NTF). The top five recipes viewed were Black Bean Soup with Turkey, Osso Buco Di Tacchino Con Porcini, Turkey Vegetable Soup, Turkey Vegetable Lasagna and Thai Turkey Wrap with Peanut Sauce.

"Our top five list shows that operators are appreciating turkey's versatility across day parts and menu items as well as cuisines," comments Sherrie Rosenblatt, NTF's director of public relations. "Our foodservice-tested recipes can help culinary professionals execute a vision for a menu or they can serve as a base for further brainstorming and development."

Site users selected their favorites from NTF's extensive library of more than 400 turkey recipes. The number one choice, developed by the corporate chefs at Sara Lee Refrigerated Foods, is a Caribbean-inspired Black Bean Soup with Turkey that combines black beans in turkey broth with pulled turkey and sherry. Osso Buco Di Tacchino Con Porcini is an Italian dish developed by Chef Mary Beth Clark of the International Cooking School of Italian Food and Wine in New York and Italy. The turkey osso buco with porcini mushrooms is sprinkled with gremolata, an aromatic garnish of chopped parsley, garlic and lemon zest, and is served with risotto or polenta.

The Turkey Vegetable Soup, submitted by The Turkey Store Company, incorporates ground turkey with corn, yellow onions, leeks and celery in a turkey stock seasoned with oregano, cumin and basil. Turkey Vegetable Lasagna, another Sara Lee creation, puts a unique spin on the traditional Italian dish by spreading a mixture of vegetables and pulled turkey between layers of noodles, tomato sauce and Ricotta cheese.

Number five on the list is a winning recipe from NTF's "Anything Goes, with Turkey®" contest: a Thai Turkey Wrap created by Chef Fred Manion of Lennie's Brewpub in Bloomington, Indiana. Strips of turkey cutlet are tossed with a marinade and wrapped in tortillas with Asian vegetable slaw and peanut sauce.
