Vegetable, Creamy and Black Bean Turkey Soups Top 2003 List

Washington, DC (October 2003) - According to the National Turkey Federation (NTF), turkey soups - Turkey Vegetable, Creamy Turkey and Black Bean with Turkey - are among the top soup recipes viewed by foodservice operators through the searchable recipe database at www.eatturkey.com.

"There are 40 turkey soup recipes in our foodservice collection, and three of them are consistently popular," says Sherrie Rosenblatt, NTF's director of public relations. "When the weather turns cool, these simple and flavorful recipes are a must-have for menu planning."

Each recipe calls for a different form of turkey; combining it with turkey stock, select ingredients and seasonings to cook up a heart-warming soup. Turkey Vegetable Soup calls for ground turkey, simmered in a light stock with yellow onions, leeks, celery, green pepper and corn. Creamy Turkey Soup uses light and dark meat in a rich thick broth containing celery, onions, pimento, parsley and thyme. While Black Bean with Turkey Soup relies on turkey bacon and pulled turkey, herbs and spices to flavor the hearty Caribbean soup.

As with the other 600 turkey recipes that make up the NTF foodservice database, soups are submitted by chefs from every segment of the foodservice industry, from celebrity chefs to culinary school students and NTF members nationwide.
