Romaine Salad with Smoked Turkey and Bing Cherries

extra virgin olive oil:
1 Cup
balsamic vinegar:
1/3 Cup
stone ground mustard:
1 Tablespoon
honey:
1 Tablespoon
salt:
1/2 Teaspoon
freshly ground pepper:
To taste
romaine lettuce, medium chopped:
3 Heads
Feta cheese, crumbled:
1-1/2 Cups
scallions, diced:
3/4 Cup
mandarin orange sections:
30 Ounces
SMOKED TURKEY, cut into 1/2-inch cubes:
3 Cups
Bing cherries, washed, halved and pitted:
2 Cups
Balsamic Vinaigrette

Whisk together oil, vinegar, mustard, honey, salt and pepper. Cover and store in refrigerator for service.

Salad Prep

Toss together lettuce, Feta, scallions, oranges and turkey. Drizzle 1 cup vinaigrette over salad and toss.

Drizzle remaining vinaigrette over cherries and toss to coat.

Arrange salads on entree plates or in shallow bowls. Sprinkle with cherries.
