Smoked Turkey & Red Chili Soup

olive oil:
6 Ounces
onion, diced into medium-sized pieces:
1 Pound
celery, diced into medium-sized pieces:
1/2 Pound
carrots, diced into medium-sized pieces:
1/2 Pound
green bell pepper, diced into medium-sized pieces:
1/2 Pound
garlic, crushed:
12 Cloves
corn, roasted and cut from cob:
1 Pound
chayote squash, peeled and cubed:
1 Pound
TURKEY STOCK:
2 Quarts
chipolte base:
2 Tablespoons
ground cumin:
2 Tablespoons
paprika:
2 Tablespoons
cilantro, freshly chopped:
1/3 Cup
tomato puree:
2 Quarts
diced tomatoes in juice:
1 Quart
SMOKED TURKEY BREAST, diced into medium-sized pieces:

In a saucepot, add the oil and saute the onions, celery, carrots, green peppers and garlic until softened.

Add the corn and squash and saute for 2 minutes.

Add the remaining ingredients. Simmer for 30 minutes and adjust seasonings.
