FOR IMMEDIATE RELEASE CONTACT: Adrienne Richards, National Turkey Federation 202-898-0100 ext. 7223, arichards@turkeyfed.org Steve Brand, executive chef of UpStairs on the Square in Cambridge, Mass., creates a self-described “big steaming pot of Turkey Chili goodness” as National Turkey Federation’s (NTF) first 2009 “Turkey Trendsetter.” NTF’s “Turkey Trendsetter” program features chefs at www.eatturkey.com from around the nation who incorporate turkey through creative and unique ways on their menu. Chef Brand’s Turkey Chili combines ground turkey with fresh ingredients including tomatoes, kidney beans, butternut squash and carrots. The chef then spices it up with cinnamon sticks, cumin, fennel and chipotle chili's Tangy, fresh lime sour cream completes this turkey dish making it an excellent choice for cost and health conscious patrons. This won’t be the first time visitors to www.eatturkey.com have seen Chef Brand. Last month NTF and how2heroes, a how-to online video destination which celebrates people’s passion for food, teamed up to feature Chef Brand on www.eatturkey.com where he demonstrated his ultimate Turkey Chili recipe for consumers to fix for the Super Bowl. “Chefs and consumers use the Internet to find innovative recipe ideas for eating out and at home,” said Sherrie Rosenblatt, NTF’s vice president of marketing and communications. “This Web-centric program allows both the foodservice and consumer audience to see how turkey is relevant in today’s environment.” Turkey fits well with Upstairs on the Square because its versatility and low food cost allows Chef Brand to feature turkey on a variety of ever-changing menus. From fine dining to snacks at the bar, turkey’s accessibility makes it the perfect protein for all day parts and cuisine types. “My menu is seasonal and changes often so I am able to create dishes with turkey for a variety of dining options,” said Chef Brand. “Turkey is a healthy, naturally low-calorie and locally accessible protein so it enables me to be very innovative in the dishes I prepare.” UpStairs on the Square opened six years ago to great fanfare and glowing reviews. The restaurant has been named one of the top 10 new restaurants in the world by Food and Wine and Best New Restaurant by Boston Magazine. The entire interview with Chef Brand and his Turkey Chili recipe is available at www.eatturkey.com.
