The National Turkey Federation (NTF) reveals the second “Turkey Trendsetter,” Sushi Chef Omar Martinez of Tex Wasabi’s Rock-N-Roll Sushi BBQ, featuring his exotic Screamin’ Gobbler sushi roll recipe. Housed on www.EatTurkey.com, the “Trendsetter” area celebrates the creativity of culinary professionals from across the country and the innovative ways they’ve incorporated turkey into their menus.
Chef Martinez describes Tex Wasabi’s, located in Santa Rosa, Calif., as a place where “East and West come together to throw a non-stop party and enjoy a variety of unique flavors. We blend California style sushi and Southern BBQ for a one of a kind food, with a funky and hip atmosphere.”
The flexibility of turkey, in flavor combinations and preparation methods, keeps it on the menu year-round at Tex Wasabi’s. “Turkey is an easy fit for our style of restaurant,” explains Martinez. “With our gringo style of sushi, we are very fortunate that it lets us combine turkey and sushi ingredients like never before.”
Co-owner and Food Network host Guy Fieri’s bold cooking style emanates from the walls of Tex Wasabi’s. “We try to incorporate this approach into everything we do and turkey allows us to do this because it fits with almost anything we think up,” says Martinez.
Well-known for pairing ingredients and flavors in new and innovative ways, Martinez’s featured “Turkey Trendsetter” recipe, The Screamin’ Gobbler, is no exception. A combination of roasted turkey, jalapenos, pepper jack cheese, avocados, green onions and sriracha mayonnaise (a blend of an Asian-style hot sauce with traditional mayonnaise), the uncommon sushi roll has quickly become a fan favorite.
“All the flavors work great independently, but come together for a totally creative approach to sushi,” explains Martinez. Like the menu says, “first you’ll gobble; then you’ll scream!”
