National Turkey Federation recipe offers busy families a convenient, delicious mealtime option

WASHINGTON - September 9, 2004 - As kids return to classes and families resume their hectic school-year schedules, moms and dads can find an easy and tasty mealtime option in a delicious and fun recipe from the National Turkey Federation: turkey tostadas.

Whether getting ready to dash out to soccer practice, run off to dance class, get an older child off to a part-time job or do any of the many other activities that keep busy families on the run, family cooks will find turkey tostadas to be an easy, fast and great tasting meal.

The recipe is available on www.eatturkey.com, where consumers can sign up to receive a healthy, new turkey recipe every month via e-mail or pick from among 1,500 ideas for preparing delicious turkey meals in the National Turkey Federation's consumer-friendly, searchable database.

In addition to many family-friendly recipes, consumers also can find guidelines for preparing lean lunches for school kids and sample menus for healthy, tasty lunches.

Turkey tostadas, serves 4:

Ingredients
2 Cups COOKED TURKEY, cut into 1/2-inch cubes
1 Package (1-1/2 ounces) taco seasoning mix
As needed water
4 6-inch corn tortillas
1/4 Cup canned refried beans
1/2 Cup Pepper Jack cheese, shredded
1/2 Cup tomatoes, chopped
1/2 Cup lettuce, shredded
2 Tablespoons onion, chopped
1/2 Cup taco sauce
1 Cup sour cream (optional)
1 Cup guacamole (optional)

  1. In large skillet over medium heat, combine turkey and taco seasoning with measurement of water recommended on seasoning package. Bring mixture to a gentle boil; immediately reduce heat and simmer 5 minutes, stirring occasionally.
  2. Arrange tortillas on large cookie sheet. Bake in a preheated 375 degree F oven 5 to 7 minutes or until tortillas are crispy and lightly browned.
  3. Spread each tortilla with one tablespoon beans. Top with 1/4 turkey mixture and cheese. Return to oven 2 to 3 minutes or until cheese is melted.
  4. To serve, top with tomatoes, lettuce, onions and taco sauce. Serve with sour cream and guacamole (optional).

National Cholesterol Education Program
The National Heart, Lung, and Blood Institute (NHLBI) launched the National Cholesterol Education Program (NCEP) in November 1985. The goal of the NCEP is to contribute to reducing illness and death from coronary heart disease (CHD) in the United States by reducing the percent of Americans with high blood cholesterol.
