The National Turkey Federation (NTF) teams up with The Fireplace in Boston, Mass., to showcase Chef/Owner Jim Solomon's signature dish, Turkey and Vegetable Pot Pie, as the March feature of "Virtual Menu 2003" on www.eatturkey.com. The latest installment in NTF's campaign to highlight the growing popularity of turkey across cuisines and market segments, Solomon's pot pie recipe represents the comfort food trend that has emerged throughout the foodservice industry, in independent and family establishments as well as fast casual restaurants.

"The Fireplace Restaurant and their turkey pot pie recipe are an exciting addition to NTF's Virtual Menu initiative," comments Sherrie Rosenblatt, NTF's director of public relations. "Jim Solomon's commitment to turkey as a familiar and traditional protein is a great model for other foodservice professionals looking to satisfy their customers' appetite for comfort food."

The Fireplace's Turkey and Vegetable Pot Pie combines celery, carrots and onions with diced turkey and seasoned turkey stock into a gravy. The mixture is poured over a puff pastry and served with turkey sausage. "Turkey sells well for us year-round," says Solomon. "It is light yet juicy in warmer months and a hearty comfort food in cold weather."

NTF's "Virtual Menu 2003" unveils current turkey trends on www.eatturkey.com, with recipes submitted by a wide variety of foodservice operations - from independents to national chains. Each month, a different establishment offers a popular turkey item from their menu, along with a plate shot, food costs when available, and a discussion with a restaurant representative on the benefits of turkey and why they choose to serve it. Beginning in April, The Fireplace will join Arby's as "Past Features" on the "Virtual Menu - Turkey Trends" home page, where users can continue to access previous virtual menu recipes. From the "The Virtual Menu - Turkey Trends" feature page, visitors can link to NTF's 30 celebrity chef demonstrations and the foodservice home page, where they will find a searchable database of more than 450 innovative turkey applications.
