Culinary Professionals Gear Up for a Busy Holiday Season

August 2005 - As more and more Americans eat holiday meals in restaurants and purchase ready-to-eat foods, restaurants will be busier than ever this holiday season. In fact, Thanksgiving Day is one of the top five busiest days for culinary professionals with most patrons looking for turkey at the center of their plate. To provide assistance, the National Turkey Federation (NTF) offers holiday menu planning and ideas on its Web site EatTurkey.com.

"For more than 10 years EatTurkey.com has been the one-stop source for trend-setting recipes, purchasing tips and celebrity chef demonstrations," comments Sherrie Rosenblatt, NTF's senior director of marketing and communication. "Now with the busy holiday season approaching we have an opportunity to provide operators with a variety of menu ideas for every type of foodservice operation, both commercial and non-commercial."

The Web site includes more than 750 standardized foodservice recipes that help to control food costs as well as ignite creativity. Culinary professionals can browse the online foodservice manual and curricula for information on purchasing, specifications, preparation and nutritional content.

In addition, NTF provides an online quick-reference guide during the months of September through December. Suggested holiday menu ideas ranging from appetizers to leftovers are displayed for a wide range of operations. Some favorites include:
