This holiday season, chefs and operators are turning to eatturkey.com for tips on making their holiday menus sparkle. Sponsored by the National Turkey Federation (NTF), the site is full of valuable information, including: the latest trends in healthy eating and how to incorporate high-protein, low-fat turkey into consumers' diets; more than 700 recipes and specialized links like an appetizer recipe page; and demonstrations from a variety of celebrity chefs.

"Today's culinary professionals are redefining holiday turkey options beyond the traditional roasted whole turkey to include a variety of spices, grilling techniques and innovative side dishes," says Sherrie Rosenblatt, NTF's senior director of marketing and communications. "At eatturkey.com, we provide all the resources needed to prepare these dishes and create successful and exciting Thanksgiving and other holiday menus. It's a one-stop source for turkey preparation tips, menu planning and ideas."

Recipe offerings on the site include:

  • Roast Turkey with Chili-Pecan Sauce and Cranberry Relish: This twist on the traditional roasted turkey incorporates the spicy hot flavors of jalapeno and cayenne. Created by Dallas' Chef Dean Fearing of the Mansion on Turtle Creek.
  • Deep Fried Turkey with Cajun Spices: This Louisianan tradition incorporates a Cajun marinade and deep-frying for a Thanksgiving turkey that's not only juicy, but spicy as well. A Beverly Shaffer recipe.
  • Turkey Sausage Dressing with Sun-Dried Cherries: This festive New American side dish is perfect for Thanksgiving, Christmas or other holiday feasts. Made with turkey sausage, it's a healthy alternative to other types of stuffing. Provided by Chef Randall Waidner of the Weber Grill Restaurant, Wheeling, IL.
  • Grilled Turkey with Molasses Barbecue Sauce: A great alternative for grilling enthusiasts, this Southwestern favorite expertly blends the spiciness of barbecue and sweetness of molasses for an unforgettable holiday fare. Developed by Chef Bobby Flay.
By visiting eatturkey.com users can also access NTF's foodservice manual. This handy guide provides answers to questions ranging from how to purchase turkey to how to carve it. It's a complete reference tool that serves as a perfect refresher course for operators and staff before the holidays.
