EatTurkey.com Highlights Potato Crusted Turkey Rillette on its "Savor the Success" Web Feature Series

This month the National Turkey Federation (NTF) will showcase Potato Crusted Turkey Rillette in the "Savor the Success" Web feature series on eatturkey.com. This unique offering is a favorite at Ethan's of Elizabeth, a popular southern bistro in Charlotte, NC.
Created by Chef Mark Martin, this turkey dish is perfect for breakfast or brunch. Using tender leg meat, olive oil and a variety of spices, a turkey rillette is created and then coated with a potato crust. The rillette is then topped with a poached egg and a truffle hollandaise sauce.
In addition to the recipe for Potato Crusted Turkey Rillette, the Web feature includes an interview with Chef Martin about how he uses turkey to enhance his menu and stay current with the latest trends. "Turkey is high in protein and low in fat, which adapts well to breakfast as well as lunch and dinner," Martin explains. "Most everyone enjoys a filling breakfast or brunch. Turkey allows my patrons an opportunity to enjoy a satisfying meal that is healthier than other proteins."
