Created by Chef Gary Kucy of the Coyote Café in Santa Fe, New Mexico, the popular Smoked Turkey Picadillo Tostadas sums up the flavors of the Southwest. It was selected for the "Savor the Success" page because of its success on the menu. The creative recipe uses dark meat from the turkey drumsticks or thighs that is mixed with an avocado salsa of serrano chiles, cilantro and mint. The fried crisp tostada shells are packed with the salsa and the shells are topped with a spicy black bean spread made with chipotle sauce, garlic and cumin. The dish is sprinkled with Queso Fresco cheese.
