"At Strongbow Inn, turkey constitutes about 68 percent of our menu sales. Around 1980, I began using turkey cutlets as another option for our menu. It started by slicing a breast portion and pounding it thin and from there the ideas became endless. I started by using some dishes that apply to sautéed veal. The turkey sautés up quickly without much shrinkage and the flavor is very clean. We use turkey cutlets to make entrees like Turkey Oscar, Turkey Schnitzel, Turkey Dijon, Turkey Gorgonzola and Turkey Marsala. The turkey cutlet is also a very cost effective menu item."
