Ingredients:

 1 tsp Canola oil

 ¼ lb Ground Turkey, dark and light meat

 1½ Oz. Butter

 ¾ Cup Flour

 1 qt. Heavy cream

 1 tsp Ground sage

 ½ tsp Ground fennel

 ½ tsp Celery salt

 Kosher salt and freshly ground black  pepper, to taste

 ½ Cup Turkey Stock
















1. Brown turkey in oil on medium-high heat. Reduce heat to medium and add butter to the browned turkey: melt butter.

2. Slowly whisk in flour.

3. Whisk in cream and blend thoroughly.

4. Add seasonings. Stir in turkey stock for flavoring and to desired consistency. Hold warm for service.
