Ingredients:

 4 Cups All purpose flour

 2 Tbsp Baking powder

 2 tsp Salt

 1/3 lb Unsalted butter

 1 ¾ - 2 Cups Buttermilk

 1 Cup Cheddar cheese, finely shredded

 1 Jalapeno small, seeded and finely     chopped

 * Yields 24 biscuits

1. Combine dry ingredients in a medium-mixing bowl.

2. Slice cold butter into ¼ inch cubes and work into the dry ingredients until the mix resembles very coarse breadcrumbs containing small butter lumps.

3. Blend Cheddar cheese and chopped Jalapeno into the dough.

4. Slowly stir buttermilk into the flour and mix. Dough will be very soft and sticky. Additional buttermilk may be used if required.

5. Turn onto a well-floured surface and knead into a soft ball. Roll about ½ inch thick and cut into round shapes. Place on a ½ sheet pan (24 per pan). Bake in a preheated 425-degree F. oven for about 10-12 minutes until tops are golden brown. Hold warm for service.
