Ingredients:

 2 Tbsp Olive Oil

 8 ounces Shiitake Mushrooms, sliced

 Salt and Pepper, to taste

 1 Tbsp Fresh Garlic, finely diced

 1 Tbsp Shallots, diced

 1 1/2 cups Turkey Stock

 1/2 cup Chives, diced

 1/4 cup Turkey Bacon, cooked and diced















1. Pour olive oil into a hot cast iron skillet. Add mushrooms and stir. Season with salt and pepper.

2. When mushrooms have cooked for 2 minutes, add garlic and shallots. Continue to sauté until shallots are translucent.

3. Pour in turkey stock to stop the cooking process. Remove from the heat. Quickly cool the mushroom mixture by transferring to a cool tray.

4. In a bowl, add chives, turkey bacon and mushroom mixture. Fold in the farce. Makes 3 cups.
