Ingredients:

 2 Cups buttermilk

 1 Tablespoon fresh thyme leaves, lightly
    chopped

 2 Tablespoons flat leaf parsley, chopped

 1 Clove garlic, peeled and chopped

 ¼ Teaspoon cayenne pepper

 ½ Teaspoon Kosher salt

 2 Cups flour

 ¼ Cup canola oil

 ¼ Cup unsalted butter

1. Prepare the marinade by combining buttermilk, thyme, parsley, garlic, cayenne and salt. Marinate the turkey for 1 to 2 hours.

2. Drain the turkey; dredge in flour and pat to set the flour onto the turkey.

3. Sauté the turkey in the canola oil and butter. Cook through until the temperature reaches an internal temperature of 170 degrees F. Remove to a warm oven, cover and hold for service.
