Ingredients:

2 cups Peanut Oil

5 lbs. Turkey, bone in

6 Tbsp Spice Mix

1 cup High Gluten Flour



















1. Separate turkey into thigh, leg and breast.



2. Heat peanut oil in a large flat cast iron skillet.



3. Season the turkey generously with 3 Tablespoons of the spice mixture.



4. Mix 1 cup flour with 3 Tablespoons spice mix.



5. Dredge the seasoned turkey pieces in the flour/spice mixture, coating it well.



6. Gently lower the pieces of turkey into the hot oil, searing it at high temperature.



7. When all sides are golden brown, drain and gently lower turkey into the stock.



8. Gently simmer the turkey until done, about 45-60 minutes.
