1. Separate turkey into thigh, leg and
breast.

2. Heat peanut oil in a large flat
cast iron skillet.

3. Season the turkey generously with 3
Tablespoons of the spice mixture.

4. Mix 1 cup flour with 3 Tablespoons
spice mix.

5. Dredge the seasoned turkey pieces
in the flour/spice mixture, coating it well.
|

6. Gently lower the pieces of turkey
into the hot oil, searing it at high temperature.
|

7. When all sides are golden brown,
drain and gently lower turkey into the stock.
|

|

8. Gently simmer the turkey until
done, about 45-60 minutes.
