Ingredients:

 2 1/4 lbs Turkey Breast, skin removed

  Salt and freshly Ground Pepper,
  as needed

  Olive Oil, as needed


















1. Purchase precut turkey scallops or cut scallops from a turkey breast.



2. Remove skin and trim away any fat.

3. Place breast on cutting surface and carve into thin slices.



4. Cover turkey slices with plastic wrap.

5. With a mallet or the flat edge of a chef's knife, pound the breast to flatten.



6. Sprinkle thoroughly with salt and pepper, brush lightly with olive oil and reserve.
