Ingredients:

 2 Tbsp fresh Thyme, stemmed

 1 Tbsp Garlic, roasted

 1/2 cup Canola Oil

 1 tsp Salt

 1 tsp Pepper

 2 Carrots, rough chop

 1 large Onion, rough chop

 2 stalks Celery, rough chop

 3 lbs Boneless Turkey Breast

 1 cup Water

1. Combine thyme, garlic, oil, salt and pepper in a small mixing bowl.

2. Place the carrots, onion and celery in a roasting pan.


3. Place the turkey breast on top of the vegetables. Add 1 cup water.

4. Rub the turkey breast with the thyme mixture.


5. Roast uncovered in a preheated 325° F. oven for 45-60 minutes, or until cooked to an internal temperature of 170° F.


6. Remove from the oven and allow to rest. Discard the rough cut vegetables.
