6 cups boiling water

zest of 2 oranges

1 cup honey or maple syrup

3 tablespoons kosher salt

1 tablespoon molasses

1 Spanish onion, cut in half then sliced

2 bay leaves

20 whole black peppercorns

1 head garlic, split in half

1/2 cup fresh ginger root, chopped

1 tablespoon mustard seeds (optional)

  1. Place all the brine ingredients in a bowl and let cool.
  2. Add the turkey chops, cover and refrigerate for 24-36 hours.
