Turkey Sausage with Citrus Salsa

2-1/2 Pounds GROUND TURKEY  
1 Package TURKEY BACON minced
1/2 Small white onion minced
3 Cloves garlic minced
3 Tablespoons dried sage  
1 Tablespoon dried cumin  
1 Tablespoon dried coriander  
1 Tablespoon salt  
1-1/2 Teaspoons pepper  
1/8 Teaspoon dried red pepper flakes  
1/4 Teaspoon dried thyme  
    Citrus Salsa  
1 Medium ripe pineapple peeled
1 Medium grapefruit peeled and sectioned
2 Medium oranges peeled and sectioned
2 Medium limes peeled
1 Medium lemon peeled
2 Tablespoons fresh cilantro leaves chopped
2 Tablespoons sugar  
1/2 Teaspoon salt  
1 Teaspoon cayenne pepper  
3 Tablespoons tequila  

Method

Sausage Patties

  1. Gently but thoroughly mix turkey, bacon, onion, garlic, herbs and seasonings. Form into 4-ounce patties.
  2. Spray grill rack with nonstick vegetable spray. Prepare grill for direct cooking method. Place sausage patties on grill rack, 4 inches from the heat, over medium heat. Grill about 5-6 minutes per side or until the internal temperature reaches 165 degrees F.
  3. Salt to taste.

Citrus Salsa

  1. Dice pineapple, grapefruit, oranges, limes and lemon.
  2. Combine in mixing bowl with remaining ingredients. Cover and refrigerate.
  3. Serve 2/3 cup chilled salsa as an accompaniment to turkey sausage patties.
